Food Smoker
Responsible for cooking and smoking sausage products. This position is also responsible for ensuring critical control limits are met during cooking and chilling of the product and this person must also know how to proceed in instances where those limits are not met.
Responsibilities
The following list is not all inclusive and may be expanded to include other duties and responsibilities as management may deem necessary from time to time.
- Must follow the HACCP (Hazard Analysis Critical Control Points) program including developing a working knowledge of the Critical Control Points and Critical Limits as they pertain to the food safety of our product.
- Completes testing to ensure cooking requirements are met.
- Push/pull cages in and out of the smoke houses.
- Monitors smoke houses while cooking is occurring including, reviewing processing schedules, operating smoke houses, using a smoke atomizer.
- Cleans related equipment as necessary.
- Completes and initials all cooking/chilling records to ensure proper temperatures have been met according to the company’s HACCP plan.
- Moves smoked cages of meat into appropriate coolers to finish cool down.
Required Knowledge, Experience, Skills:
- High School Diploma or equivalent.
- Requires 2+ years of food manufacturing experience.
- Requires exceptional attendance and punctuality.
- Must have a dependable vehicle.
- Requires a basic understanding of GMP's (General Manufacturing Practices), HACCP and SQF (Safe Quality Food) guidelines.
- Requires basic math skills (ability to add, subtract, multiply and divide).
- Requires good oral and written communication skills in order to interact with other employees and management.
- Must be able to use measurement tools such as a thermometer.
- Must be familiar with how to read and use Chart Recorders.
- Must be able to lift, push, pull up to 50 pounds on regular basis and occasional basis.
- Must be able to bend, twist, stoop and squat, reach above shoulders as needed for day-to-day responsibilities and other miscellaneous duties.
- Must have good hand and eye coordination.
- Must be able to work in temperatures of 40 degrees or less, as well as very warm temperatures of 80 degrees or higher.
- Must be able to work overtime, during peak production periods – some Saturdays may be required.
- Must be a fluent English speaker and writer.
- Must have exceptional attention to details.
- Must be able to work unsupervised and be self motivated.
After a 90 days, this position may become eligible for Union benefits which includes: Medical, Pension, and Paid Vacation and Sick
Permanent Position
Shift and Hours:
- Monday, Tues, Wednesday (and some Saturdays)
- Afternoon/Evening Shift: 2pm to 2:30am (this will vary based upon the quantity of product that is being smoked (this would likely be the maximum shift length)
- 24-30 hrs per week
$20.00/hour
